Creamy Avocado Herb Dressing

If you saw that luscious head of lettuce in my last post from my first delivery of organic produce from Abundant Harvest Organics you will now see how I decided to utilize it below. I had an avocado on hand so I decided to make a Creamy Avocado Herb Dressing for the salad. Since I always have a large pot of mint in the garden and my basil hedge is in its full glory right now I thought this would make a great combination. I took out some garlic from the pantry and found a lone lemon in the fridge. Since there were jalapeno peppers in my delivery I thought that would make a great added kick to the dressing.

I prepped the lettuce, mixed in some organic baby lettuces, then added heirloom tomatoes, cucumbers, olives, and some shredded carrots to the salad. Doesn’t it look divine! All it needs is a scrumptious dressing.

Mixed green saladIn short order the dressing was complete. Below you can see how beautiful the salad is and how creamy the dressing is after mixing it in the blender. I had to display it in my green depression glass dish even though the colors clash a bit.

Instructions
  1. Skin and pit the avocado.
  2. Place the lemon juice, cloves, jalapeno in the blender first followed by the avocado and the herbs. Blend until thick and creamy. Add water as needed if too thick.
  3. Season with salt and pepper to taste. Add more jalapeno if you like a spicier dressing.
Recipe Notes

If you have any dressing left, cover and store in the refrigerator for 2-3 days. It does not turn brown!
